A contractor with a real process will tell you, in specific terms, that any change is documented and requires your written approval before it moves forward, with the cost and time impact spelled out clearly. If the answer is vague, that's your answer.
One point of contact, not a relay race
General contracting means managing subcontractors, permitting, materials, and inspections under one roof. If you're being handed off between multiple people with no single person accountable for the whole project, delays and miscommunication are almost guaranteed. Ask who your main point of contact will be from day one to final walkthrough, and make sure it stays the same person.
